Set oven temperature to 350°F and allow to fully preheat.

Lay tortilla on a flat work surface. Evenly distribute shredded chicken, cooked rice, black beans, corn, and half of the cheddar cheese down the center.

Fold in the sides of the tortilla, then roll tightly to enclose the filling. Place burrito seam side down on a lightly greased baking sheet.

Transfer to oven and bake for 10 minutes until edges begin to crisp.

Remove burrito from oven. Spoon enchilada sauce over top and sprinkle with remaining cheddar cheese. Return to oven and bake an additional 5 minutes until cheese is melted and bubbling.

Transfer baked burrito to a plate. Top with extra enchilada sauce and a dollop of sour cream if desired. Serve immediately.
