Baked Chicken Wet Burrito (Printable Version)

# Ingredients:

→ Main Filling

01 - 1 large burrito-sized flour tortilla
02 - 1 cup shredded cooked chicken
03 - 2 tablespoons black beans, rinsed and drained
04 - 2 tablespoons canned fiesta-style corn, drained
05 - 1/4 cup cooked white rice
06 - 1/3 cup shredded cheddar cheese, divided

→ Sauce and Serving

07 - 1/4 cup enchilada sauce
08 - Sour cream, for serving

# Steps:

01 - Set oven temperature to 350°F and allow to fully preheat.
02 - Lay tortilla on a flat work surface. Evenly distribute shredded chicken, cooked rice, black beans, corn, and half of the cheddar cheese down the center.
03 - Fold in the sides of the tortilla, then roll tightly to enclose the filling. Place burrito seam side down on a lightly greased baking sheet.
04 - Transfer to oven and bake for 10 minutes until edges begin to crisp.
05 - Remove burrito from oven. Spoon enchilada sauce over top and sprinkle with remaining cheddar cheese. Return to oven and bake an additional 5 minutes until cheese is melted and bubbling.
06 - Transfer baked burrito to a plate. Top with extra enchilada sauce and a dollop of sour cream if desired. Serve immediately.

# Notes:

01 - For a spicier flavor, use pepper jack cheese or add chopped jalapeños to the filling.
