# Ingredients:

→ Dough

01 - 1 cup milk
02 - 3/4 cup (1 + 1/2 sticks) unsalted butter, softened
03 - 2 large eggs
04 - 4 cups (550g) bread flour
05 - 1 tbsp (10g) instant dry yeast
06 - 1/4 cup (50g) granulated sugar
07 - 1 tsp salt

→ Cinnamon Filling

08 - 1/2 cup (1 stick) unsalted butter, softened
09 - 1 cup (200g) light brown sugar, packed
10 - 2 tsp ground cinnamon

→ Topping

11 - 1 egg, beaten (for egg wash)
12 - Powdered sugar (for topping)

# Steps:

01 - Add all the dough ingredients to the bowl of a stand mixer. If using hands, mix by hand as described in the notes.
02 - Using a dough hook, knead on slow speed for 2 minutes, then increase to medium speed and mix for 6-8 more minutes until the dough detaches cleanly from the bowl. Adjust with extra flour if sticky.
03 - Form the dough into a ball, place it in a clean, floured bowl, cover, and let rise for 45 minutes or until the dough doubles in size.
04 - In a medium bowl, mix the butter, brown sugar, and cinnamon until smooth, using a paddle attachment or a spatula.
05 - On a lightly floured surface, roll the dough into a rectangle roughly 12x16 inches.
06 - Spread the cinnamon filling evenly across the entire dough surface.
07 - Fold the dough into a trifold. Slice it widthwise into 12 strips, then cut each strip lengthwise into three strands. Braid the strands together and roll them lengthwise to form buns.
08 - Place the buns on a lined baking sheet, cover with a tea towel, and let rise for 1 hour or until doubled in size.
09 - Preheat the oven to 350°F while the buns finish proofing.
10 - Brush the buns with egg wash. Bake for 20-25 minutes or until golden brown.
11 - Transfer the buns to a cooling rack. Let cool for 5 minutes before serving. Sprinkle with powdered sugar, if desired.

# Notes:

01 - You can substitute all-purpose flour for bread flour. Kneading by hand takes about 8-10 minutes, as highlighted in the notes.
