Add all the dough ingredients to the bowl of a stand mixer. If using hands, mix by hand as described in the notes.

Using a dough hook, knead on slow speed for 2 minutes, then increase to medium speed and mix for 6-8 more minutes until the dough detaches cleanly from the bowl. Adjust with extra flour if sticky.

Form the dough into a ball, place it in a clean, floured bowl, cover, and let rise for 45 minutes or until the dough doubles in size.

In a medium bowl, mix the butter, brown sugar, and cinnamon until smooth, using a paddle attachment or a spatula.

On a lightly floured surface, roll the dough into a rectangle roughly 12x16 inches.

Spread the cinnamon filling evenly across the entire dough surface.

Fold the dough into a trifold. Slice it widthwise into 12 strips, then cut each strip lengthwise into three strands. Braid the strands together and roll them lengthwise to form buns.

Place the buns on a lined baking sheet, cover with a tea towel, and let rise for 1 hour or until doubled in size.

Preheat the oven to 350°F while the buns finish proofing.

Brush the buns with egg wash. Bake for 20-25 minutes or until golden brown.

Transfer the buns to a cooling rack. Let cool for 5 minutes before serving. Sprinkle with powdered sugar, if desired.
