Buffalo Chicken Tater Tot Casserole (Printable Version)

# Ingredients:

→ Meat

01 - 1 pound ground chicken

→ Base

02 - 16 oz frozen tater tots
03 - 1 1/2 cups shredded cheddar cheese (sharp)
04 - 1/2 cup blue cheese (optional)

→ Sauce

05 - 1 tablespoon olive oil
06 - 1/4 cup flour
07 - 1 1/2 cups chicken broth
08 - 1/4 cup heavy cream, buttermilk, or milk
09 - 1.5 tablespoons homemade ranch seasoning
10 - 2 tablespoons butter
11 - 1/2 cup buffalo wing sauce

→ Vegetables

12 - 1/2 cup shredded carrots (optional)
13 - 1/4 cup chopped celery (optional)

# Steps:

01 - Heat olive oil in large skillet over medium high heat. Add ground chicken and cook, breaking up with spatula, until no longer pink.
02 - Sprinkle flour over cooked chicken and stir to coat. Slowly stir in chicken broth and bring to a simmer for 2-3 minutes to thicken and reduce sauce.
03 - Stir in cream (or buttermilk or regular milk). Add ranch seasoning with salt and pepper, combining thoroughly. Cook an additional 2-3 minutes until sauce is nicely thickened.
04 - Melt butter in microwave in large microwave safe container. Add buffalo sauce and stir to combine.
05 - Spray slow cooker with nonstick spray. Add the meat mixture. Top with carrots, celery and blue cheese if desired. Arrange tater tots on top and drizzle with remaining buffalo sauce. Finish with shredded cheddar cheese.
06 - Cover and cook on low for 5-6 hours or high for 2-3 hours until cheese is melted and mixture is bubbling.

# Notes:

01 - This can be prepared in a 2.5 quart casserole slow cooker or a 5 quart oval slow cooker.
02 - For oven preparation, bake at 375°F for 15-20 minutes until tater tots are crispy, cheese is melted, and filling bubbles.
03 - Leftovers keep up to 3 days in refrigerator.
04 - A packet of ranch dressing mix can substitute for homemade seasoning.
