Bring a large pot of salted water to a boil over medium-high heat. Add fettuccine and cook until al dente, 8-10 minutes or according to package directions. Reserve 1/2 cup of pasta water, drain the pasta, and set aside.

Pat shrimp dry with paper towels and toss with half of the Cajun seasoning. Set aside.

Heat olive oil in a large skillet over medium heat. Once hot, add smoked sausage and cook 2-3 minutes per side, until golden and slightly crisp. Transfer to a plate and tent loosely with foil.

In the same skillet, add seasoned shrimp in a single layer. Cook 1-2 minutes per side until opaque and cooked through. Remove and set aside with the sausage.

Add unsalted butter to the same skillet and melt over medium heat. Stir in minced garlic and cook for about 1 minute until fragrant.

Pour in heavy whipping cream. Add remaining Cajun seasoning, kosher salt, black pepper, and crushed red pepper. Stir to combine and bring to a gentle boil, stirring occasionally.

Reduce heat to low and let sauce simmer for 6-8 minutes until slightly thickened.

Add grated parmesan cheese. Stir until cheese is melted and sauce is smooth.

Return pasta, sausage, and shrimp to the skillet. Toss with sauce until evenly coated. Garnish with fresh chopped parsley and serve immediately.
