Open the can of refrigerated cinnamon rolls. Separate the rolls and cut each one into quarters or bite-sized segments.

In a large bowl, vigorously whisk together eggs, milk, vanilla extract, ground cinnamon, and nutmeg until fully blended.

Add the cut cinnamon roll pieces into the egg mixture, stirring gently to ensure each piece absorbs custard on all sides. Allow to soak for several minutes.

Liberally grease a 9×13-inch baking dish with butter or cooking spray.

Distribute soaked cinnamon roll pieces evenly in the prepared baking dish. Bake in the preheated oven for 15–20 minutes, or until golden brown and cooked through. Test doneness by inserting a toothpick in the center; it should emerge clean.

While baking, ready the icing included with the cinnamon rolls. After removing the baked bites from the oven, immediately drizzle icing over the warm pieces for even coating.

Dust bites with powdered sugar if desired. Serve warm, accompanied by maple syrup.
