# Ingredients:

01 - 1 1/2 pounds boneless steak, such as ribeye, filet, or sirloin
02 - Neutral oil, as needed
03 - Kosher salt, to taste
04 - Freshly cracked black pepper, to taste
05 - 3 sweet onions, thinly sliced
06 - 9 slider buns
07 - 3/4 pound havarti cheese, sliced

→ Cowboy Butter

08 - 1 stick unsalted butter, at room temperature
09 - 4 garlic cloves, minced
10 - 1/2 lemon, zested and juiced
11 - 1 tablespoon dijon mustard
12 - 1 teaspoon paprika
13 - 1/2 teaspoon cayenne
14 - 1/2 teaspoon dried thyme
15 - 1 teaspoon red pepper flakes
16 - 1 tablespoon fresh chives, minced
17 - 2 tablespoons fresh parsley, minced
18 - Kosher salt, to taste
19 - Freshly ground black pepper, to taste

# Steps:

01 - Combine softened unsalted butter, minced garlic, lemon zest and juice, dijon mustard, paprika, cayenne, dried thyme, red pepper flakes, chives, parsley, salt, and pepper in a medium bowl. Blend thoroughly until fully incorporated. Set aside.
02 - Pat steak dry and season generously with kosher salt and freshly cracked black pepper. Heat neutral oil in a large skillet over medium-high heat. Sear steak to desired doneness, turning once for even browning. Allow steak to rest for at least 5 minutes, then slice thinly against the grain.
03 - In the same skillet, add thinly sliced sweet onions. Cook over medium-low heat, stirring regularly, until onions turn golden brown and are thoroughly caramelized.
04 - Arrange slider buns open-faced on a sheet pan. Generously spread cowboy butter on both halves. Layer with sliced steak, caramelized onions, and havarti cheese. Place under the broiler for 1-2 minutes until the cheese is melted and bubbly. Cap with top bun, serve immediately, and enjoy.
