Freezer Meal Chicken Teriyaki (Printable Version)

# Ingredients:

01 - 1 1/2 pounds boneless skinless chicken breasts
02 - 1/2 cup sliced carrots
03 - 1/4 cup soy sauce (or tamari for gluten free)
04 - 1/4 cup honey
05 - 1/4 cup chicken broth
06 - 2 tablespoons rice vinegar
07 - 2 tablespoons brown sugar
08 - 2 teaspoons jarred minced garlic
09 - 1/4 teaspoon ground ginger
10 - 2 tablespoons tapioca flour whisked with 2 tablespoons water until smooth

# Steps:

01 - Add all ingredients to a freezer bag and shake to combine.
02 - Remove air from the freezer bag and seal. Store in the fridge for up to 3 days or in the freezer for up to 3 months.
03 - Thaw the freezer bag overnight in the fridge before cooking.
04 - Add the thawed contents of the bag to a slow cooker.
05 - Set the slow cooker to high for 3-4 hours or low for 6-8 hours.
06 - Shred the chicken using forks.
07 - Serve the dish over rice or as desired.

# Notes:

01 - Substitute chicken thighs if desired.
02 - Cornstarch can be used as an alternative to tapioca flour for thickening.
03 - If the sauce is too thin, add more thickener and let heat for an additional 15 minutes.
04 - If the sauce is too thick, add a little more chicken broth.
