Preheat oven to 425°F. Line a baking sheet with parchment paper or aluminum foil.

Place each sweet potato between two chopsticks or wooden spoons on a cutting board. Make crosswise cuts 1/8 inch apart, cutting nearly all the way through but leaving the base intact. Repeat with all sweet potatoes.

In a small bowl, combine the melted butter, garlic powder, kosher salt, and black pepper. Mix until well blended.

Arrange sweet potatoes on the prepared baking sheet. Generously brush each with the garlic butter mixture, making sure to press some between the slices. Reserve a portion of the mixture for later use.

Bake sweet potatoes for 30 minutes.

After 30 minutes, use a knife to gently fan out the sweet potato slices. Brush again with some of the reserved garlic butter.

Return to the oven and bake an additional 15–20 minutes, or until the sweet potatoes are crisp on the edges and tender inside. Adjust baking time based on potato size.

Remove from the oven. Brush with remaining garlic butter and garnish with fresh rosemary or thyme if desired. Season with extra kosher salt or black pepper to taste.
