01 - 2 sheets puff pastry, thawed
02 - 2 tablespoons unsalted butter
03 - 4 breakfast chicken sausage links, chopped
04 - 1 medium red bell pepper, finely chopped
05 - 1/4 cup red onion, finely chopped
06 - 7 large eggs
07 - 1 cup cheddar cheese, grated
08 - 1 green onion, finely chopped

# Steps:

01 - Melt butter in a skillet over medium heat. Add chopped chicken sausage, red bell pepper, and red onion; cook until vegetables are softened and sausage is lightly browned. Beat eggs, then pour into the skillet. Scramble the eggs with the sausage and vegetables until set. Remove from heat and stir in grated cheddar cheese and green onion until cheese is evenly distributed.
02 - On a lightly floured surface, gently roll out each puff pastry sheet. Cut each sheet into equal rectangles. Place a generous spoonful of filling onto half of each rectangle, leaving a border for sealing. Fold the pastry over the filling to enclose, then press the edges together and crimp with a fork to seal completely.
03 - Arrange the assembled pockets on a parchment-lined baking sheet. Bake in a preheated oven at 400°F (204°C) for 15–20 minutes, or until golden brown and crisp. Allow to cool slightly before serving.
