# Ingredients:

→ Pretzel Dough

01 - 1 ½ cups lukewarm water
02 - 2 ¼ teaspoons instant quick-rise yeast (1 packet)
03 - 1 teaspoon salt
04 - 1 tablespoon granulated sugar
05 - 4 cups bread flour

→ Baking Soda Bath

06 - 8 cups water
07 - 4 tablespoons baking soda

→ Egg Wash

08 - 1 large egg yolk
09 - 1 tablespoon water

→ Topping

10 - 2 tablespoons pretzel salt

# Steps:

01 - In the bowl of a stand mixer, whisk together lukewarm water, yeast, salt, and sugar. Let sit for 1-2 minutes.
02 - Add bread flour and mix using the dough hook attachment on low speed until dough forms. Increase to medium and mix for 4-5 minutes until dough is soft and smooth. Add 1-2 tablespoons of extra flour if sticky, or knead by hand for 5-7 minutes on a lightly floured surface.
03 - Shape dough into a ball, cover with a clean towel, and rest for 15-20 minutes.
04 - Preheat oven to 230ºC (450ºF) on the second rack from the bottom. Line two baking sheets with silicone mats or greased parchment paper.
05 - In a large pot, combine water and baking soda. Stir and bring to a boil. Mix egg yolk and water for egg wash and set aside.
06 - Divide dough into 8 equal pieces. Roll each into a 24-inch rope, shape into pretzels, and place on prepared baking sheets.
07 - Place each pretzel in the boiling baking soda bath for 30 seconds. Remove with a slotted spatula and let excess water drip off. Return to the baking sheet.
08 - Brush pretzels with egg wash and sprinkle with pretzel salt.
09 - Bake at 230ºC (450ºF) for 12-14 minutes or until golden brown. Cool slightly on a wire rack and serve.

01 - Homemade pretzels can be stored at room temperature in a sealed container for 3 days. Reheat in the microwave for 10-15 seconds or bake at 175ºC (350ºF) for 10-12 minutes if frozen.
