# Ingredients:

01 - 6 boneless chicken breasts or 8 boneless chicken thighs, cut into bite-sized pieces

02 - 2 cloves garlic, minced
03 - 1 tablespoon fresh ginger, minced or 1 teaspoon ground ginger

→ Spices

04 - 1 teaspoon ground black pepper

→ Marinade

05 - 1/3 cup soy sauce
06 - 1/3 cup water
07 - 3 tablespoons red wine or mirin
08 - 1/4 cup brown sugar plus 2 tablespoons
09 - 1 tablespoon distilled vinegar or rice vinegar
10 - 1 tablespoon cornstarch

11 - 6 wooden skewers, soaked in water for at least 15 minutes

# Steps:

01 - In a medium bowl, whisk together soy sauce, water, red wine or mirin, brown sugar, vinegar, garlic, ginger, and black pepper until well blended.
02 - Add chicken pieces to the bowl and toss to coat. Cover and refrigerate for a minimum of 30 minutes to marinate.
03 - Thread the marinated chicken evenly onto the soaked wooden skewers.
04 - Preheat grill to medium-high heat. Grill skewers, turning occasionally and basting with remaining marinade, until chicken is fully cooked and lightly charred, about 10 to 12 minutes.
05 - Transfer skewers to a serving platter and serve hot, offering extra marinade as a dipping sauce if desired.
