Langostino Lobster Roll Brioche (Printable Version)

# Ingredients:

01 - 1 pound langostino lobster, thawed if frozen, thoroughly drained and patted dry
02 - 1/4 cup mayonnaise
03 - 1 rib celery, finely diced (about 1/4 cup)
04 - 1 tablespoon minced fresh chives, plus more for garnish
05 - 1 tablespoon freshly squeezed lemon juice
06 - 1 teaspoon grated lemon zest
07 - 1/4 teaspoon kosher salt
08 - 1/4 teaspoon freshly ground black pepper

→ Buns

09 - 4 split-top brioche hot dog buns, sides trimmed off

→ For Toasting

10 - 2 tablespoons unsalted butter, divided

# Steps:

01 - Thoroughly drain langostino lobster and pat dry using paper towels to remove any excess moisture.
02 - In a large mixing bowl, blend together mayonnaise, diced celery, chives, lemon juice, lemon zest, kosher salt, and black pepper until evenly combined.
03 - Gently fold in the prepared langostino lobster until all pieces are uniformly coated. Cover and chill mixture if desired to allow flavors to meld.
04 - Heat half of the butter in a large skillet over medium heat. Position buns cut-side down and toast until golden and crisp, about 2 minutes. Repeat with remaining butter and buns as needed.
05 - Generously fill each toasted bun with the chilled langostino mixture. Top with additional chives and a light sprinkling of lemon zest if desired. Serve immediately.
