05 - 8 ounces snap peas or snow peas, trimmed
06 - 1 red bell pepper, sliced
07 - 1 large ripe mango, diced

→ For the Sauce

10 - 2 tablespoons gluten-free soy sauce or coconut aminos
11 - 2 tablespoons cashew butter or peanut butter
12 - 2 cloves garlic, minced
13 - 0.5 tablespoon freshly grated ginger
14 - 1 teaspoon honey
15 - 1 tablespoon warm water
16 - 1 teaspoon red pepper flakes
17 - 0.5 teaspoon tapioca flour, arrowroot flour or cornstarch

# Steps:

01 - In a large skillet, heat half of the oil over medium-high heat. Add chicken breast and cook, stirring occasionally, until browned and fully cooked. Transfer chicken to a plate and set aside.
02 - Add the remaining oil to the same skillet. Add minced garlic and diced red onion, cooking for 1 to 2 minutes until fragrant. Add snap peas and sliced red bell pepper, sautéing until just crisp-tender.
03 - Return the cooked chicken to the skillet. Fold in diced mango and sauté briefly to warm through.
04 - In a small bowl, whisk together soy sauce, cashew butter, additional minced garlic, freshly grated ginger, honey, and red pepper flakes until smooth. Pour the sauce over the chicken and vegetables, mixing thoroughly to coat.
05 - Mix warm water and tapioca flour or cornstarch in a separate bowl to form a slurry. Stir the slurry into the skillet and cook for 1 to 2 minutes, allowing the sauce to thicken.
06 - Remove from heat. Garnish with cashews and cilantro if desired. Serve immediately, accompanied by steamed rice or noodles.
