04 - 1 small red bell pepper, diced
05 - 4 cloves garlic, minced
06 - 6 cups chicken stock
07 - 1 teaspoon Italian seasoning
08 - 1/2 teaspoon crushed red pepper flakes
09 - 6 ounces uncooked small pasta shells
10 - 2 large handfuls baby spinach, roughly chopped
11 - 1/2 cup heavy cream
12 - 1/2 cup fresh basil leaves, julienned and divided

→ Toppings

13 - Freshly ground black pepper
14 - Freshly grated Parmesan cheese

# Steps:

01 - In a large pot, cook the ground Italian sausage over medium heat. Break the sausage into small pieces and cook until browned.
02 - Add the diced white onion, red bell pepper, and minced garlic to the pot. Sauté until the vegetables are softened, about 4–5 minutes.
03 - Pour in the chicken stock. Add Italian seasoning and crushed red pepper flakes. Stir to combine and bring the mixture to a simmer.
04 - Stir in the uncooked small pasta shells. Simmer until the pasta is al dente, about 8–10 minutes.
05 - Add the chopped spinach, heavy cream, and half of the fresh basil. Cook gently until the spinach is wilted and the soup is heated through.
06 - Ladle the soup into bowls. Top each serving with the remaining fresh basil, a sprinkle of black pepper, and freshly grated Parmesan cheese.

# Notes:

01 - For a spicier flavor, select hot Italian sausage and increase the red pepper flakes to taste.
