Set oven to 350°F. Line a quarter sheet pan or 9×13-inch baking dish with parchment paper.

Place graham crackers or saltine crackers in a single layer to fully cover the base of the prepared pan.

In a saucepan over medium heat, melt unsalted butter with packed brown sugar, granulated sugar, corn syrup, ground cinnamon, and sea salt. Stir constantly and bring to a rolling boil. Continue cooking and stirring for 2 minutes.

Remove caramel mixture from heat. Stir in chopped pecans and vanilla extract until evenly distributed.

Pour the hot pecan caramel evenly over the crackers and spread with a spatula to coat completely.

Transfer pan to oven and bake for 10 minutes, or until the caramel is bubbling.
