01 - Preheat oven to 350°F (175°C). Line a large baking sheet with a silicone baking mat or parchment paper.
02 - In a large bowl, mix together pumpkin puree, eggs, and peanut butter until completely combined.
03 - Add in whole wheat flour and pumpkin pie spice (or cinnamon) and stir until just combined.
04 - Lightly flour a flat surface and roll out the dough to 1/4 inch (0.6 cm) thickness, adding more flour as needed to prevent sticking.
