# Ingredients:

01 - 2 to 3 tablespoons olive oil
02 - 2 stalks celery, chopped
03 - 1 red bell pepper, chopped
04 - 1 medium onion, chopped
05 - 1 tablespoon minced garlic
06 - 2 cans (10.5 ounces each) cream of chicken soup
07 - 1 cup half and half
08 - 2 cups sharp cheddar cheese, shredded
09 - 3 cups egg noodles, cooked
10 - 1.5 pounds chicken breast, cooked and shredded
11 - 1 tablespoon chopped parsley
12 - Salt and black pepper, to taste

→ Topping

13 - 1 sleeve Ritz crackers
14 - 1 cup sharp cheddar cheese, shredded
15 - 4 tablespoons unsalted butter, melted

# Steps:

01 - Preheat oven to 350°F (177°C).
02 - Heat olive oil in a large skillet over medium heat. Add celery, red bell pepper, onion, and garlic; sauté until the vegetables are tender, about 5 to 7 minutes.
03 - In a large mixing bowl, combine the sautéed vegetables, cream of chicken soup, half and half, sharp cheddar cheese, cooked egg noodles, shredded chicken breast, parsley, salt, and black pepper. Stir until evenly incorporated.
04 - In a bowl, crush Ritz crackers and mix with shredded cheddar cheese and melted butter until fully combined.
05 - Transfer the chicken casserole mixture into a greased 9x13-inch baking dish. Evenly distribute the Ritz cracker topping over the surface.
06 - Bake uncovered for 30 minutes, or until the topping is golden and the casserole is bubbling at the edges.
07 - Allow the casserole to cool for several minutes before serving.
