# Steps:

01 - In a large pot over medium-high heat, brown the ground Italian sausage until fully cooked, then drain off any excess fat.
02 - Melt the salted butter in the same pot. Add diced onion, chopped celery, and sliced carrots; sauté for 5 to 7 minutes or until vegetables are softened, stirring occasionally.
03 - Stir in minced garlic, dried basil, dried thyme, salt, black pepper, and dried fennel. Cook for 1 minute until fragrant. Add the chopped Roma tomatoes and continue to stir.
04 - Pour in the dry white wine to deglaze the pot, scraping any browned bits from the bottom. Stir in low-sodium chicken broth and bring to a simmer. Cook uncovered for 20 minutes.
05 - Stir in potato gnocchi and heavy cream. Cook for 3 to 5 minutes or until gnocchi is tender and floats to the surface.
06 - Fold in baby spinach and allow to wilt for 1 minute. Taste for seasoning and adjust as needed. Ladle into bowls and serve hot.
