07 - 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
08 - 6 cups chicken broth
09 - 1 can (14.5 oz) diced tomatoes with juice
10 - 1 teaspoon dried thyme
11 - 1 teaspoon dried oregano
12 - Salt and pepper to taste
13 - 2 tablespoons olive oil
14 - Juice of 1 lemon (optional)

# Steps:

01 - In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage and set aside, leaving the drippings in the pot.
02 - In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
03 - Return the browned sausage to the pot. Stir in the white beans, diced tomatoes with juice, chicken broth, thyme, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes.
04 - Add the chopped kale to the soup and simmer for an additional 5-7 minutes, or until the kale is tender. If desired, stir in the lemon juice for added brightness before serving.
