Slow Cooker Beer Braised Chicken (Printable Version)

# Ingredients:

01 - 1 1/2 pounds chicken breast
02 - 1/4 cup flour (regular or gluten-free)
03 - 2 tablespoons olive oil
04 - 1/2 cup diced yellow onion
05 - 1 green pepper, diced
06 - 1 cup cleaned and sliced kale
07 - 1 teaspoon herb and garlic seasoning
08 - 1 teaspoon chili seasoning
09 - 12 oz beer
10 - 14 oz can diced tomatoes
11 - 1 tablespoon honey
12 - 1 tablespoon tapioca flour or cornstarch, whisked with 1 tablespoon of water
13 - 4 slices cooked and crumbled bacon

# Steps:

01 - Lightly coat chicken in flour.
02 - Heat olive oil in a skillet or multi-cooker. Add chicken and cook for 3-4 minutes on each side until lightly browned and crispy.
03 - Transfer browned chicken to the slow cooker.
04 - Add all remaining ingredients except bacon to the slow cooker.
05 - Cover and cook on high for 2-3 hours or on low for 6-8 hours until chicken is cooked through.
06 - Serve chicken over steamed rice and top with crumbled bacon.
