Slow Cooker Cashew Chicken (Printable Version)

# Ingredients:

01 - 3/4 pound boneless skinless chicken breasts
02 - 1/2 cup roasted unsalted cashews
03 - 1/4 cup soy sauce or tamari
04 - 2 tablespoons rice vinegar
05 - 1 tablespoon chili garlic sauce
06 - 2 teaspoons honey
07 - 1 teaspoon dried ginger
08 - 2 tablespoons tapioca flour

# Steps:

01 - Chop chicken into bite-sized pieces and place into slow cooker along with cashews.
02 - Whisk together soy sauce, rice vinegar, chili garlic sauce, honey, and dried ginger. Pour over chicken in the slow cooker.
03 - Whisk together tapioca flour with 2 tablespoons of water until smooth. Mix into slow cooker contents.
04 - Cover and cook on high for 3 hours or on low for 6 hours.
05 - Serve over rice or as desired.
