02 - 1 cup long-grain brown rice, rinsed and drained
03 - 1 tablespoon Dijon mustard
04 - 1 teaspoon garlic powder
05 - 1 teaspoon dried thyme
06 - 1/2 teaspoon salt
07 - 1/4 teaspoon ground black pepper
08 - 2 cups low-sodium chicken broth
09 - 1 pound boneless, skinless chicken breasts
10 - 1 pound fresh broccoli, cut into small florets

→ Additional Ingredients

11 - 1/2 cup plain Greek yogurt
12 - 1/2 cup grated Parmesan cheese
13 - 1 cup shredded cheddar cheese

# Steps:

01 - Place chopped onion, rinsed brown rice, Dijon mustard, garlic powder, dried thyme, salt, and black pepper into the slow cooker and mix until combined.
02 - Pour low-sodium chicken broth over the mixture in the slow cooker, then lay chicken breasts evenly on top.
03 - Cover the slow cooker and cook on high for 2 1/2 to 3 1/2 hours until chicken is cooked through and rice is tender.
04 - Steam broccoli florets separately until crisp-tender, then set aside.
05 - Remove chicken breasts from the slow cooker and cut into bite-sized pieces. Return chicken to the slow cooker along with steamed broccoli, Greek yogurt, Parmesan cheese, and cheddar cheese. Stir thoroughly until cheese is melted and ingredients are well combined.

# Notes:

01 - Use brown rice to prevent overly soft texture during extended cooking time.
02 - Steaming broccoli separately preserves color and firmness.
