# Ingredients:

→ Chicken Preparation

01 - 2 pounds boneless skinless chicken tenderloins
02 - 2 tablespoons olive oil
03 - 2 tablespoons Greek seasoning
04 - salt and pepper to taste

→ Vegetable Salsa

05 - 2 salad cucumbers, quartered
06 - 1 cup grape tomatoes, quartered
07 - 1/4 small red onion, thinly sliced
08 - 3 large basil leaves, slivered
09 - 1 tablespoon olive oil
10 - salt and pepper to taste

→ Yogurt Sauce

11 - 5.3 ounces plain Greek yogurt
12 - 1 tablespoon lemon juice

→ Assembly

13 - 8 taco-size flour tortillas

# Steps:

01 - Combine chicken tenderloins with 2 tablespoons olive oil, Greek seasoning, and salt and pepper. Place seasoned chicken in the slow cooker.
02 - Cover slow cooker and cook chicken on high for 3 to 4 hours or on low for 6 to 8 hours, until fully cooked and tender.
03 - In a bowl, toss quartered cucumbers, quartered grape tomatoes, sliced red onion, slivered basil leaves, and 1 tablespoon olive oil. Season with salt and pepper, then refrigerate until ready to serve.
04 - Whisk together plain Greek yogurt and lemon juice in a small bowl. Refrigerate until serving.
05 - Warm flour tortillas. Fill each with portions of cooked chicken, top with vegetable salsa and a dollop of yogurt sauce. Serve immediately.

# Notes:

01 - For best flavor and texture, allow chicken to rest for a few minutes in its juices before assembling tacos. The salsa can be prepared in advance and kept chilled until serving.
