01 - 1 1/2 pounds boneless, skinless chicken breasts

02 - 1/4 cup chicken broth
03 - 1 tablespoon soy sauce
04 - 1 tablespoon honey
05 - 2 tablespoons lemon juice
06 - 1/2 teaspoon rice vinegar
07 - 1/2 teaspoon garlic powder
08 - 1/4 teaspoon ground ginger
09 - dash hot sauce

10 - 1 tablespoon cornstarch dissolved in 1 tablespoon water

# Steps:

01 - Place the boneless, skinless chicken breasts in the base of a slow cooker.
02 - In a medium bowl or measuring cup, whisk together chicken broth, soy sauce, honey, lemon juice, rice vinegar, garlic powder, ground ginger, hot sauce, and cornstarch slurry until smooth.
03 - Evenly pour the prepared sauce mixture over the chicken breasts in the slow cooker.
04 - Cover with the lid and cook on high for 3 to 4 hours or on low for 6 to 8 hours, until the chicken is fully cooked and tender.
05 - Remove the chicken from the slow cooker and use two forks to shred it. Return shredded chicken to the slow cooker and mix to ensure it is thoroughly coated with the sauce.
06 - Serve the shredded lemon chicken hot over rice or as preferred.
