Slow Cooker Ranch Chicken (Printable Version)

# Ingredients:

01 - 2 tablespoons butter
02 - 1 ½ pounds boneless skinless chicken breast
03 - 2 tablespoons homemade ranch seasoning
04 - 1 pound red baby potatoes
05 - 1 pound carrots, peeled and cut into 1-inch chunks
06 - 1 ½ cups chicken stock
07 - 2 tablespoons flour
08 - ¼ cup heavy cream

# Steps:

01 - Melt butter in skillet over medium-high heat. Season both sides of chicken breasts with a bit of the ranch seasoning. Sear until lightly browned on each side.
02 - Add potatoes and carrots to the bottom of the slow cooker. Place chicken on top.
03 - Add chicken stock and sprinkle with ranch seasoning. Cover and cook on high for 2-3 hours or on low for 4-6 hours until chicken reaches an internal temperature of 165°F.
04 - Mix flour with a small amount of water to make a paste. Add paste and cream to the slow cooker and stir to combine with chicken broth.
05 - Replace lid and cook for an additional 30 minutes, or until gravy thickens.

# Notes:

01 - Can be made in an Instant Pot by cooking on high pressure for 12 minutes with a 15-minute natural pressure release.
02 - Can be partially assembled as a freezer meal by combining chicken, carrots, and ranch seasoning in a freezer bag.
