In a large skillet over medium-high heat, brown ground chuck until no longer pink. Season evenly with Southern Soul House Seasoning.

Transfer the browned ground chuck to the slow cooker. Add chopped onion, peeled and diced potatoes, frozen mixed vegetables, crushed tomatoes, Rotel tomatoes with green chilies, beef broth, water, and salt.

Set the slow cooker on low setting and cook for 6 to 8 hours, or on high for 5 to 6 hours, until vegetables are tender and flavors are fully developed.

Taste and adjust seasoning as needed before serving. Ladle soup into bowls and serve hot. Garnish with parsley if desired.
