Smothered Beef Loin Chops (Printable Version)

Beef loin chops, slow cooked with onions and herbs, finished with a creamy pan sauce.

# Ingredients:

→ Beef

01 - 2 pounds bone-in beef loin chops

→ Fats

02 - 1 tablespoon olive oil
03 - 1 tablespoon unsalted butter

→ Aromatics

04 - 1/2 small yellow onion, diced (approximately 1/4 cup)
05 - 2 to 3 cloves garlic, minced

→ Seasonings

06 - 1 teaspoon dried thyme
07 - 1/2 teaspoon salt
08 - 1/2 teaspoon dried mustard powder
09 - 1/8 to 1/4 teaspoon ground black pepper, to taste

→ Sauce Components

10 - 1 1/2 cups chicken broth
11 - 3/4 cup heavy cream
12 - 1 tablespoon cornstarch

→ Herbs

13 - 1 teaspoon dried parsley
14 - 1 teaspoon dried basil

# Steps:

01 - Sprinkle both sides of the beef loin chops evenly with dried thyme, salt, ground black pepper, and mustard powder.
02 - In a large skillet over medium-high heat, melt butter and warm olive oil until shimmering. Add diced onion and minced garlic, sauté for approximately 2 minutes until softened.
03 - Push sautéed onion and garlic to one side of the skillet. Add seasoned beef chops and sear each side for about 2 minutes until lightly browned.
04 - Move the beef, onions, and garlic into the slow cooker.
05 - Pour chicken broth into the slow cooker over the beef chops.
06 - Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours until the beef is tender.
07 - Carefully transfer beef chops to a plate and cover to keep warm.
08 - Whisk heavy cream into the remaining cooking liquid in the slow cooker.
09 - Pour liquid into a small saucepan and whisk in cornstarch. Bring to a boil over medium heat, whisking constantly for 2 to 3 minutes or until thickened.
10 - Add additional salt and ground black pepper to the sauce if necessary.
11 - Pour thickened sauce over the beef chops and sprinkle with dried parsley and basil before serving.

01 - For the richest flavor, sear the beef chops before transferring to the slow cooker. Adjust seasoning at the end for a balanced sauce.
