In a large skillet over medium-high heat, melt butter and warm olive oil until shimmering. Add diced onion and minced garlic, sauté for approximately 2 minutes until softened.

Push sautéed onion and garlic to one side of the skillet. Add seasoned beef chops and sear each side for about 2 minutes until lightly browned.

Move the beef, onions, and garlic into the slow cooker.

Pour chicken broth into the slow cooker over the beef chops.

Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours until the beef is tender.

Carefully transfer beef chops to a plate and cover to keep warm.

Whisk heavy cream into the remaining cooking liquid in the slow cooker.

Pour liquid into a small saucepan and whisk in cornstarch. Bring to a boil over medium heat, whisking constantly for 2 to 3 minutes or until thickened.
