Spinach Artichoke Pizza Crust (Printable Version)

# Ingredients:

→ Dough

01 - 16 ounces pizza dough, homemade or store-bought

→ Spinach Béchamel Sauce

02 - 8 ounces fresh spinach, divided
03 - 2 tablespoons unsalted butter
04 - 2 tablespoons all-purpose flour
05 - 3/4 cup whole milk
06 - 1/4 teaspoon onion powder
07 - Salt, to taste
08 - Freshly ground black pepper, to taste
09 - 1 clove garlic, minced
10 - 2 tablespoons extra virgin olive oil, divided

→ Toppings

11 - 4 ounces provolone cheese, chopped (about 1 cup)
12 - 2 ounces shredded mozzarella cheese (1/2 cup)
13 - 2 ounces finely shredded parmesan cheese, lightly packed (1/2 cup)
14 - 6 to 8 canned artichoke hearts, drained well and quartered
15 - Red pepper flakes, for serving (optional)

# Steps:

01 - Roll the pizza dough into a round and transfer to a baking sheet or pizza stone.
02 - Sauté half of the spinach in 1 tablespoon olive oil over medium heat until wilted. Remove to a cutting board and chop finely. In the same pan, melt butter over medium heat, whisk in flour to form a roux, and cook for 1 minute. Gradually whisk in milk. Add onion powder, garlic, salt, and pepper. Simmer, stirring constantly, until thickened. Stir in the chopped sautéed spinach and remaining raw spinach until wilted. Remove from heat.
03 - Spread spinach béchamel sauce evenly over the rolled dough, leaving a border for the crust. Scatter provolone, mozzarella, and parmesan cheeses on top. Arrange artichoke hearts evenly over the cheeses.
04 - Bake in a preheated oven at 475°F until the crust is golden and cheeses are bubbling, about 12–15 minutes.
05 - Remove from the oven and let cool for several minutes. Slice and sprinkle with red pepper flakes before serving, if desired.

01 - Additional toppings such as cooked chicken or diced tomatoes can be added for variation.
02 - Premade spinach dip may be substituted for the béchamel sauce for expedited preparation.
