01 - 2 tablespoons olive oil
02 - 1.5 pounds boneless, skinless chicken breasts
03 - 1 tablespoon Greek seasoning blend
04 - 1 tablespoon jarred minced garlic
05 - 1 shallot, peeled and sliced
06 - 12 oz jar roasted red peppers, drained
07 - 1/2 cup kalamata olives
08 - 1/2 cup sun-dried tomatoes
09 - 1/4 cup white wine

12 - Goat cheese, crumbled

# Steps:

01 - Heat olive oil in a skillet over medium-high heat.
02 - Sprinkle Greek seasoning evenly over the chicken breasts.
03 - Add chicken to the skillet and cook for 3-4 minutes on each side until just browned but not cooked through.
04 - Transfer the chicken to the slow cooker. Add garlic, sliced shallot, roasted red peppers, kalamata olives, and sun-dried tomatoes.
05 - Pour white wine into the slow cooker. Cover and cook on high for 3-4 hours or low for 6-8 hours.
06 - Before serving, garnish each plate with a squeeze of fresh lemon, chopped herbs, and crumbled goat cheese.

01 - Store leftovers in the fridge for up to 3 days in a sealed container and reheat in the microwave or skillet.
