Tomato Corn Salsa (Printable Version)

A vibrant mix of sweet corn, tomatoes and jalapeños with fresh cilantro and lime juice – ready in minutes!

# Ingredients:

01 - 1 ½ cups frozen sweet corn kernels, thawed
02 - ½ cup grape or cherry tomatoes, halved
03 - 2 tablespoons diced shallot or red onion
04 - 1 tablespoon diced jalapeño (about ½ a pepper, ribs and seeds removed)
05 - 2 tablespoons chopped cilantro
06 - ½ tablespoon olive oil
07 - ½ tablespoon fresh lime juice

# Steps:

01 - Toss all ingredients in small bowl
02 - Cover and keep refrigerated until ready to serve
03 - Can be made up to a day in advance

# Notes:

01 - Use leftover fresh or thawed frozen corn
02 - Shallot will have a milder flavor and red onion will be a little stronger
03 - Meal prep a day in advance, keeps well for a couple of days if you have leftovers
04 - Canned jalapenos won't work in this recipe--use fresh
