These focaccia breadsticks are my answer to any dinner that needs a wow factor without fuss. Inspired by classic Italian focaccia but easier to shape and perfect for sharing, they come together with basic ingredients you probably have in your kitchen. Their golden edges and pillowy bite make them irresistible for pizza night, pasta dinners, or just served warm with your favorite dip.
I made these for a family movie night and they disappeared before the opening credits rolled. Kids love pulling these breadsticks apart and dunking them into marinara.
Ingredients
- Water: Warm water helps the yeast activate. Use water between 110 and 115 degrees for best results
- Active dry yeast: Provides lift and chew. Look for fresh yeast not past the expiration date
- Granulated sugar: Feeds the yeast which encourages a good rise
- Extra virgin olive oil: Adds signature flavor and moisture. Choose high quality oil for best taste
- Italian seasoning: Blends classic Mediterranean herbs and gives depth to every bite
- Garlic, minced: Gives bold punch of flavor. Fresh garlic is best but jarred can be used in a pinch
- Kosher salt: Balances flavors and improves bread texture
- All purpose flour: The main structure of the bread. Use unbleached flour for best crumb
- Garlic powder: Brings extra mellowed garlic taste throughout the dough
- Parmesan cheese, grated: Creates a savory salted crust. Use freshly grated for the most flavor
Instructions
- Bloom the Yeast:
- Combine warm water, yeast, and sugar in a large bowl and let rest for five minutes. The water should turn slightly foamy which shows yeast is active
- Mix the Oil and Herbs:
- Whisk together olive oil, Italian seasoning, minced garlic, and salt in a small bowl. This makes a deliciously fragrant oil
- Combine Wet Mixtures:
- Pour half of the oil mixture into the yeast mixture so the flavors infuse early on. Save the rest of the oil for later
- Make the Dough:
- Add flour to the bowl. Stir with a wooden spoon or your hands until a sticky dough forms
- First Rise:
- Place dough in a greased bowl and cover with a clean towel. Rest in a warm spot for one hour. The dough should double in size
- Prepare the Pan:
- Preheat your oven to 450 degrees. Pour the remaining oil mixture into a 7 by 11 inch baking dish and brush it all over the bottom and sides
- Shape and Dimple:
- Transfer the risen dough to the prepared pan. Gently press and stretch it to the edges. Use your fingers to press deep dimples all over the surface
My obsession with olive oil in breadmaking started the first time I tore off a piece of fresh focaccia in Rome. The rich scent always brings me back and it is now my secret weapon for making any dinner special for my family
Storage Tips
Keep leftover breadsticks wrapped in foil or in an airtight container at room temperature for up to two days. To reheat, warm slices briefly in a low oven until soft and steamy. Lay a damp paper towel over them to revive texture if needed
Ingredient Substitutions
If you do not have Italian seasoning, use a mix of dried basil, oregano, and a pinch of rosemary. For a dairy free version, simply skip the parmesan or use your favorite vegan substitute. Whole wheat flour can replace half of the all purpose for a nuttier result
Serving Suggestions
Serve with warm marinara dipping sauce or homemade garlic butter. These make fantastic sandwich bread—just split them open and fill with your favorite meats and veggies. For a brunch table, try slices with whipped ricotta and honey
Cultural Context
Focaccia has been beloved in Italy since ancient times and every region makes it a little differently. Traditionally it was a way to use up simple ingredients while creating something festive for gatherings. I love bringing that sense of abundance to my own family meals
Seasonal Adaptations
Sprinkle fresh rosemary or thyme over the dough before baking in the spring. Add thinly sliced cherry tomatoes for a bright summer topping. Mix in caramelized onions for a cozy autumn twist
Success Stories
Once my neighbor stopped by after smelling these from the hallway. She is gluten sensitive and was amazed I could whip up homemade bread that easily. Another time my youngest insisted these breadsticks were better than restaurant bread baskets which is now my gold star achievement
Freezer Meal Conversion
To freeze, bake the breadsticks fully then cool. Slice if desired and wrap tightly in foil and a freezer bag. Reheat straight from frozen in the oven wrapped in foil for fifteen minutes at 350 degrees
I hope this recipe brings the same joy to your table as it has to mine. Happy baking
